Cooking from the pantry Day 3

Ok, so we’re day whatever of the quarantine, but I’m on day 3 of cooking from my pantry.  Today is good for 2 meals including BACON!

Yep, bacon.

I’m not what one would call a bacon fanatic, but, I swear there isn’t anything better than the smell of bacon cooking in the morning.  And when I cook bacon I like to get as much out of it as I can.

I made homemade bacon gravy because bacon and biscuits is a thing.  I only cook bacon in my cast iron skillet and it then turns into delicious gravy afterward.  It’s a very simple recipe:
Once the bacon is fully cooked and removed onto a plate for cooling, add 2 TBSP flour and 1 cup milk.  That’s it. I didn’t add any salt or other seasonings.  Keep stirring until it’s the thickness you want. Remember you can always add more milk so start pouring slowly and add more if needed.    This gravy is also decadent over eggs.




Later that night I made dinner with bacon. Creamy Chicken Bacon Ranch over rice.  
Season your skillet with butter (I think I used 3 TBSP). Garlic, 4 cloves and then cook the chicken in that delicious buttery goodness.  I like to cut mine in strips and spread all over the skillet, they cook faster and stays moist.  
Once the chicken is cooked and removed to a plate for cooling pour 1 cup milk in.  2 TBSP of ranch seasoning, and add in a few pieces of the bacon you cooked earlier that day.  Let the sauce cook slowly and simmer.  Add the chicken back so it can soak up all the flavoring.  

That’s it - once it’s done serve over rice.  And add a vegetable for a side (I made green beans).
